Black Bean & Chickpea Salad

 

14 oz can tomatoes, diced Vinaigrette:  
1/4 cup green onion, minced 1/2 cup olive oil
3 TB cilantro, chopped 1 1/2 tsp cumin
14 oz can corn 1 TB chili powder
can black beans 5 tsp red wine vinegar
2 cups chickpeas, prepared    
1 green pepper, chopped    
1 red pepper, chopped    

 

  • Place all ingredients in medium-sized bowl and toss.

  • Ready to serve.
