Nutty Coleslaw
This recipe is quick and easy.
It's a wonderful way to add chickpeas to your diet and great for
pot-lucks too!
Serves: 6-8
| 4 cups |
shredded cabbage |
|
|
| 1 cup |
chickpeas, cooked |
|
|
| 1/2 cup |
almonds, toasted |
|
|
| 1/2 cup |
raisins |
|
|
| 1/4 cup |
onions, chopped |
|
|
| 1/3 cup |
oil |
|
|
| 1/3 cup |
vinegar |
|
|
| 3 tbsp |
soy sauce |
|
|

Mix together shredded cabbage,
chickpeas, almonds, raisins and onions.

In a separate bowl, whisk oil,
vinegar and soy sauce.

Pour dressing over salad.
