Nutty Coleslaw

 

This recipe is quick and easy.  It's a wonderful way to add chickpeas to your diet and great for pot-lucks too!

Serves:  6-8

4 cups shredded cabbage    
1 cup chickpeas, cooked    
1/2 cup almonds, toasted    
1/2 cup raisins    
1/4 cup onions, chopped    
1/3 cup oil    
1/3 cup vinegar    
3 tbsp soy sauce    

 

  • Mix together shredded cabbage, chickpeas, almonds, raisins and onions. 

  • In a separate bowl, whisk oil, vinegar and soy sauce.

  • Pour dressing over salad.

  • Serve.
